BENGALI MUTTON CURRY.
Mutton curry in Bengal , is a very special recipe , as well as the most loved recipe in Bengal. Bengali mutton curry is a red, spicy mutton curry with potatoes, because you know !! Bengalis are obsessed with their potatoes.
It is a must have on Sundays, and on any vacation .
Bengalis love it with hot steaming rice, a wedge of lime.
Without wasting further time let's get started!

INGREDIENTS:
For marination
1) Mutton ( 1kg)
2) chopped onions.
3) tomato puree ( note: if your tomatoes are sour , make sure that you deseed them and then use, other wise your curry is going to turn sour.)
4) yogurt
5) green chilli paste
6) ginger garlic paste
7) mustard oil.
8) salt
9) red chilli powder
10) Kashmiri chilli powder
11) turmeric powder
12) coriander powder
13) cumin powder
For the curry
1) mustard oil
2) bay leaves,
3) cinnamon stick
4) clove
5) cardamom.

METHOD:
Marinate the mutton , with 200grams of finely chopped onions,
1 tomato puree, if your tomatoes are sour then dressed them and use them , otherwise your curry might turn sour. Add 100 grams of fresh yogurt, 2 tablespoons of ginger garlic paste, add green chilli paste according to your taste, add salt and red chilli powder according to your , taste , add 1/2 tablespoons of turmeric powder, 1 tablespoons of coriander powder, 1 tablespoons of cumin powder, and lastly add 50ml of mustard oil and mix the ingredients well and keep it for marination for about 2 hours or if you want you can keep it for 1 night .
After the marination, heat up a kadai and add 2 tablespoons of mustard oil and wait until the mustard oil turns pale yellow. Add peeled and half cut potatoes in the oil and fry them until golden brown. Take them out of the kadai when golden brown and keep them aside. Temper the oil with 1 cinnamon stick , 3 cloves and 3 cardamon and 2 bay leaves. Add the marinated mutton and cook it until the oil gets separated from the mutton , then add the potatoes and cook them for another 20 minutes, and then transfer the curry to a pressure cooker , add 1 cup of water add 1/2 tablespoons of powdered garam masala .Wait for 12- 14 whistles on medium heat.
Your Bengali mutton curry is ready , enjoy it with hot steaming rice and a wedge of lime.
