CHICKEN BIRYANI

In restaurants, Biryanis are the most eaten dishes.
Biryani varies from state to state .
In Kolkata they have potato in their Biryanis.and Bengalis just cannot imagine their biryanis without potatoes!!
In Delhi or collectively, in North India they have tandoori chicken in it and some Barista , but without potatoes.
In the south , people love their biryanis with Salam.and the most famous and most loved Biryani, which is Hyderabadi Biryani, which is popular in Hyderabad.
So today I will be making chicken Biryani ( Kolkata style).
Let's get started !!

Ingredients:
1) chicken with bone
2) basmati rice( aged)
3) potatoes
For marination of the chicken:
In a bowl add the chicken , and add salt according to your taste and keep it for 15 minutes
Add some yoghurt, ginger garlic paste , chilli paste ,fried onions,turmeric powder, red chilli powder, dhania powder, jeera powder.and mix it well.keep it for marination for atleast 2 hours.
Boil the basmati rice , until Cooked upto only 80% .
In a kadhai heat up oil, and add the chicken, and cook it at the stage when chicken is ready and cooked nicely add one table spoon of rose water and 1 table spoon of kewra water, and mix them well.
In a small bowl add a little bit of milk rose water, kewra water and yellow food colour.mix it well.
In a big kadhai coat a layer of ghee and add a little bit of the curry and the add 1 layer of rice , then add the chicken pieces, and then the food colour mixture and repeat this until the kadhai is full.
Keep the kadhai for dum.
For 5 mins and your Biryani will be ready.
