KUNDRI BHAJA.
Is a simple dish yet very tasty.
It is best on days when you do not want have something very rich, rather you just want to have that plain , simple dal , steaming rice or roti, and a veg on the platter.
Bengalis call this "kundrir bhaja".
"Kundri" means Ivy gourds and " bhaja" means stir fry.
Hope you will like this recipe, and without wasting any time let's get started!

INGREDIENTS:
1) Kundri ( Ivy gourds)
2) mustard oil
3) green chillies
4) black cumin
5). Salt
6) sugar ( optional)
7) turmeric powder.
8) red chilli powder ( optional)
METHOD:
Cut the ivy gourds into half , wash them and keep them aside.
Heat up a pan , and add mustard oil into it. Temper the oil with 2 green chillies and 1/2 teaspoon of black cumin , for 2- 3 seconds , and add the sliced kundris ( Ivy gourds) .
Cook them until they are nice and soft. Add salt according to your taste , and add 1 teaspoon of turmeric powder.
Mix it well , cover the pan or the kadai with a lid ,and let it cook for more 5 to 7 minutes more.
After 5 to 7 minutes uncover the lid and add a little bit of sugar ( optional) to enhance the taste .
Stir it for a few seconds.
And that's it!
Your Kundri bhaja or Ivy gourd fry is ready to eat.
